Cajun and Creole Cooking Series
This is our first Cooking Series available in 2019. Classes start on Wednesday March 13th at 6:00 pm. Class will occur every Wednesday night from 6:00 to 9:00 until April 17th. This is the first 6 week course in a series of 5 courses available in 2019. This series offers a dynamic collection of hands-on, technique focused classic Cajun and Creole recipes. In each class you will learn knife skills, basic cooking techniques and plate presentation.
Week 1 – March 13 – Chicken and Andouille Sausage Gumbo, Shrimp Etouffee and Bananas Foster.
Week 2 – March 20 – Spiced Pecan Citrus Salad, Ya-Ka-Mein, Bourbon Balls and Butter Cream Sauce
Week 3 – March 27 - Bacon Wrapped Oysters w/Meniere Sauce, Red Beans and Rice with Fried Catfish, Sour Cream Pound Cake with a lemon/berry compote
Week 4 – April 3 - Corn Maque Choux with Shrimp, Artichoke stuffed with Creamed Crabmeat, Lemon Cheese Cake
Week 5 – April 10 - Asparagus Charlotte, Shrimp and Plantain Torte, Orange Glazed pecans with Coco Cream
Week 6 – April 17 – Candy Bacon, Eggs Benedict over Crab Cakes, Jerk Chicken and Waffles
Each class enjoys Wine, Beer, Soda, Tea or water
The cost is $750 per person for the entire series (all 6 classes). Drops=in are welcome with 24 hour advance notice, cost is $150 per person
