ROUX CLASS

You’ll begin the class by learning the best kept secrets for authentic New Orleans cooking.  We begin by discovering the importance of the Cajun Holy Trinity, and start cutting and prepping to make the best New Orleans cuisine you’ve ever tasted.

Once the Cajun Holy Trinity is all chopped, we will take a break and get our first glass of wine.  Mise en place (everything in its place), we start the Dark Roux for the gumbo.  After the gumbo, we start the light Roux for the Shrimp Ettouffee. 

After properly plating your meal, it's time to enjoy the fruits of your labor. 

The last part of the class, (and possibly your favorite) will include teaching you how to make Bananas Foster. Yum! We’ll show you a fool-proof way to make this dessert that is sure to impress your friends and family.

Each student is shown professional techniques, the secrets of seasonings and the preparation of selected recipes while learning the history of Louisiana's world-famous cuisine.  Wine, Beer and Water are included. Reservations are required.  Minimum class is 2 people with a maximum of 10 people.

SAUCE CLASS

This is also a Hands-on class.  Prepare to tantalize your taste buds.  Each course is better than the last!  One cold sauce and three warm sauces are prepared. We boil jumbo shrimp and make a Remoulade sauce to serve over the shrimp on a bed of chiffonade romaine.  Next is oven-roasted asparagus over sliced tomatoes with a hollandaise sauce and surrounded by grilled sea scallops. Following that, a classic trout Meuniere shows you the four stages of butter.  Finally, Crab Cakes with a Beurre Blanc Sauce class. Wine, beer and water are included. Minimum class is 2 people with a maximum of 10 people.

New Orleans Style Brunch Hands-On Classes  

Join us for a True New Orleans style brunch!  The South is known for breakfast, so let us show you how it’s done in New Orleans.  Bottomless champagne, mimosas, wine, beer and water are included. 

The Chef will teach you to prepare a soulful menu of:

  • Bananas Foster Waffles or Jerk Chicken with Waffles

  • New Orleans Shrimp and Grits

  • Eggs Benedict with Hollandaise Sauce on a Crab Cake

  • Praline bacon (Pig Candy)

Minimum class is 2 people with a maximum of 10 people.

KING CAKE Hands-On Class

We love New Orleans King Cakes, but there is a never-ending the debate about who has the best! Too much icing, not enough icing, too much cinnamon… you get the idea. Come learn how to make your own King Cake, just the way you like it. We will, of course, be indulging in a couple of different King Cakes. We will also have a pot of gumbo ready for you.

- The King Cake that you make will be wrapped up in a Cake box so that it can be presented to your family in style. Wine, Beer and water will be available, as well as a cash bar. This is a hands-on class, you will be kneading dough.
