You’ll begin the class by learning the best kept secrets for authentic New Orleans cooking. No Wine yet, we still have to cut up the Cajun Holy Trinity, and start prepping to make the best New Orleans cuisine you’ve ever tasted.
Once the Cajun Holy Trinity is all chopped, we will take a break and get our first glass of wine. Mise en place (everything in its place) we start the Dark Roux for the gumbo. After the gumbo, we start the light Roux for the Shrimp Ettouffee.
After properly plating your meal, it's time to enjoy the fruits of your labor.
The last part of the class, and possibly your favorite will be when we teach you how to make Bananas Foster, yum! We’ll show you a fool-proof way to make this dessert that is sure to impress your friends and family.
Each student is shown professional techniques, the secrets of seasonings and the preparation of selected recipes while learning the history of Louisiana's world-famous cuisine. Reservations are required. Minimum class is 2 people with a maximum of 8 people.

This is also a Hands-on class. Prepare to tantalize your taste buds. Each course is better than the last. One cold sauce and three warm sauces are prepared. We boil jumbo shrimp and make a Remoulade sauce to serve over the shrimp on a bed of chiffonade romaine. Next is oven-roasted asparagus over sliced tomatoes with a hollandaise sauce and surrounded by grilled sea scallops. Then a classic trout Meuniere shows you the four stages of butter. Finally, soft shell crabs, deep-fried, with a tomato and basil Beurre Blanc Sauce class.
